So, What-Cha-What-Cha-What-Cha Want? (So What-Cha WANT)?!?!

Hi. My name is Jeremy. I'm the Head Brewer and Yeast Shepherd here at NoCoast Beer Co. I've been a professional brewer for the past 22 years or so and I moved here to Iowa to help pilot the SS NoCoast a little over a year ago. And changes have been-a-happinning!  Slowly, but surely. As the saying goes, "Slow is smooth. Smooth is fast."

One of the biggest changes that we've been making is to embrace IPA in ALL of its various iterations. From my understanding, NoCoast started out with a "No Way IPA" philosophy. And I understand that idea. I mean, there are many breweries here in Iowa who are making GREAT IPAs!  Sure, I could list them, but if you've read my diatribe THIS far, you obviously like craft beer and already know the breweries that I would be mentioning. But... why SHOULD NoCoast make IPAs?  Well, because we like them. We know how to make them. Making them helps US to learn new techniques and to use new ingredients. And, (most importantly), we can bring our own unique spin on IPA to YOU, our thirsty friendos!  Allow me to explain, if you will...

It all started waaaaaay back in September of 2024. I was just starting to get me "sea legs" here in Iowa. And I had this idea. The West Coast has their version of IPA. And the East Coast has their version of IPA. But here in the Midwest, we didn't REALLY have our own version. Many brewers were making their takes on West Coast and East Coast IPA. My hope was to create a uniquely Midwestern IPA. A NoCoast IPA, if you will!  And that, my friends, is how our NoCoast Midwest IPA was born.

This begs the question, "What in the world IS a Midwest IPA?"  The answer to that question was wide open. We could make it whatever we wanted it to be. That's one of the reasons that I've been drawn into brewing, honestly. We had a blank slate in front of us. So, we listed all of the things that we liked and disliked about both West Coast and East Coast IPAs. We liked the clarity of West Coast. But we're not huge fans of beer that is TOO bitter. We like the juicy character of the East Coast IPAs, but those totally opaque "hazy-bois" really didn't do it for us.

We decided to aim for the clarity of a West Coast IPA and the juicy character of an East Coast IPA with Midwest IPA. And we believe that we got what we were looking for. We used a few tried and true hops like Citra and some new school hops like McKenzie to get the character that we were searching for with Midwest IPA. We also began utilizing a new flowable Citra hop product called Hyperboost in the dry hop. New skool meets old skool. That's how we roll.

And that philosophy and ethos is continuing. An ongoing hoppy/malty exploration. That next adventure is our brand-spankin'-new Hazy DDH (Double Dry Hop) Double IPA series of beers that we call Shoreless Echoes. Each iteration will have another hop used as the DDH and a different colored label to let y'all know. The first version is a yellow label (V1.0) and we used Nectaron hops. (And it's an AWESOME JuiceBOMB, if I do say so myself)!  We're already busy brewing the V1.1 {Blue}. I wonder what hop we'll be using?  THAT, my friendos, is for another blogpost!  Stay tuned!  Cheers!
